  • In a thick-bottomed pot or kadai, combine the full-fat milk and sugar.
  • Bring the mixture to a boil over medium heat, stirring constantly until the sugar dissolves completely.
  • Reduce the heat to low and simmer, stirring occasionally, until the milk reduces to half its original volume. This slow simmering process creates the signature dense, creamy texture of kulfi.
  • While the milk simmers, prepare the malai paste. Combine the malai (or heavy cream), bread crumbs, and milk powder in a small bowl and mix until a smooth paste forms.
  • Once the milk has reduced by half, add the malai paste to the pot. Stir well to combine and continue to simmer for 1-2 minutes, allowing the paste to thicken the kulfi base.
  • Remove the kulfi mixture from the heat and let it cool to room temperature. This prevents the temperature shock from curdling the kulfi.
  • Stir in the chopped almonds, cashews, raisins, cardamom powder, and kewra essence (if using).
  • Chill the mixture in the refrigerator for 30 minutes. This helps to firm up the kulfi slightly before freezing.
  • Pour the chilled kulfi mixture into kulfi molds or small, airtight containers. Freeze for 5-6 hours, or until solid.
  • To serve, quickly dip the molds in warm water to loosen the kulfi. Gently unmold and enjoy the creamy, flavorful treat.
