  • 1 cup Nuts almonds – chopped; cranberries are optional, cashews, mixed, walnuts
  • 1 tsp All-Purpose Flour
  • 1/2 tsp Ghee
  • 1 tsp Sugar powdered

Prepare the Breadcrumb Base

  • Grind 4 slices of brown bread into breadcrumbs using a food processor or blender.
  • Combine 1 tbsp ghee and 2 tbsp powdered sugar with 1 cup of breadcrumbs. Mix well.
  • Press this mixture into the bottom of a greased 8x8 inch baking dish. Refrigerate for 10 minutes.

Make the Cake Batter

  • In a separate bowl, combine the remaining breadcrumbs (from about 1 cup of bread), 1/2 cup all-purpose flour, 1/2 cup powdered sugar, 1/2 tsp baking soda, and 1 tsp baking powder. Mix thoroughly.
  • Add 1 tbsp ghee, 3/4 cup milk, and 1 tsp vanilla extract to the dry ingredients. Mix until a smooth batter forms. The batter should be thick but pourable. Adjust the milk accordingly.

Prepare the Nut Mixture

  • In another bowl, combine 1 cup chopped mixed nuts, 1 tsp all-purpose flour, 1/2 tsp ghee, and 1 tsp powdered sugar. Mix well.

Assemble and Bake the Cake

  • Remove the baking dish from the refrigerator.
  • Spread half of the nut mixture evenly over the breadcrumb base.
  • Pour the cake batter over the nut layer.
  • Top with the remaining nut mixture. Gently tap the baking dish to level the layers.
  • Bake in a preheated air fryer at 160°C (320°F) for 15-20 minutes, or until a toothpick inserted into the center comes out clean. You may need to adjust baking time based on your air fryer.
  • Alternatively, bake in a preheated oven at 180°C (350°F) for 25-30 minutes.
  • Let the cake cool completely before slicing and serving. Store in an airtight container at room temperature.
