Ingredients
Cake Ingredients
- 2 Apple peeled and grated
- ½ cup Honey
- 150 ml Milk
- 2 tbsp Vinegar
- 1 tsp Vanilla Extract
- ¾ cup Oil vegetable or canola
- 2 cup Whole Wheat Flour whole
- ½ cup Sugar brown, packed
- ¼ cup Sugar granulated
- 1 tsp Baking Powder
- 1 tsp Baking Soda
- ½ tsp Cinnamon ground
- ¼ tsp Nutmeg ground
- ¼ tsp Salt
Icing
- 1 cup Sugar powdered
- 1 tsp Vanilla Extract
- 1 tbsp Milk
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a Bundt pan. This ensures the cake releases cleanly.
- In a large bowl, whisk together the whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Sifting the dry ingredients helps create a light and airy cake.
- In a separate bowl, whisk together the honey, oil, vanilla extract, vinegar, and milk.
- Add the brown sugar and granulated sugar to the wet ingredients and whisk until the sugar is dissolved.
- Gradually add the dry ingredients to the wet ingredients, whisking until just combined. Be careful not to overmix, as this can make the cake tough.
- Fold in the grated apples. Distribute the apples evenly for optimal flavor in each bite.
- Pour the batter into the prepared Bundt pan, filling it about ¾ full. Gently tap the pan on the counter to remove any air bubbles.
- Bake for 40-45 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 15 minutes before inverting it onto a wire rack to cool completely.
- While the cake cools, prepare the icing. In a small bowl, whisk together the powdered sugar, vanilla extract, and milk until smooth and pourable. Add more milk, a teaspoon at a time, if needed to reach desired consistency.
- Once the cake is completely cool, drizzle the icing over the top and let it set before slicing and serving.
Recipe Notes
Good To Know
- If you don’t have a bundt pan, you can use any other baking tin.
- For extra bursts of apple flavor, fold in a handful of finely diced apples in addition to any grated or pureed apple already in the batter; this adds texture and visual appeal to each slice.
- Brush the finished cake with a warm honey glaze (simply heat a little honey with a splash of water or lemon juice) while it's still slightly warm for a glossy finish and added moisture.
- If you’d like a spiced variation, add ground cinnamon, nutmeg, or cardamom to the batter—these pair exceptionally well with apple and honey and give the cake a cozy aroma.
Expert Tips
- For a richer flavor, use brown sugar instead of granulated sugar.
- Don't overmix the batter, as this can lead to a tough cake. Mix until just combined.
- Let the cake cool in the pan for 10-15 minutes before inverting it onto a wire rack to cool completely. This prevents the cake from sticking and breaking.
Storage Instructions
- This cake freezes well: slice it after cooling, then wrap portions individually to keep them fresh for up to a month—perfect for quick lunchbox treats.
