Ingredients
For the Khandvi Batter:
- 1 cup Gram Flour besan
- 1 cup Yogurt plain yogurt or curd
- 2 cup Water
- 1.5 tsp Salt adjust to taste
- 3/4 tsp Turmeric haldi
- 1 tsp Asafoetida hing
For the Tempering (Tadka):
- 2.5 tbsp Oil
- 2 tsp Mustard Seeds rai
- 2 tsp Sesame Seeds til
- 9 leaves Curry Leaves
- 1-2 Chili Peppers finely chopped, green
Instructions
Prepare the Batter
- Combine gram flour, yogurt, water, salt, turmeric powder, and asafoetida in a blender.
- Blend until a smooth, lump-free batter forms.
Microwave the Batter
- Pour the batter into a microwave-safe bowl.
- Microwave on high for 2 minutes.
- Stir well and microwave for another 2-3 minutes, or until the batter thickens to a spreadable consistency. The batter should be thick enough to coat the back of a spoon.
Prepare the Tempering
- Heat oil in a small pan.
- Add mustard seeds and let them splutter.
- Add sesame seeds and curry leaves; sauté until fragrant.
- Add green chilies and sauté briefly.
Assemble and Garnish
- Pour the tempered oil over the cooked batter and mix well.
- Spread the batter thinly onto a greased baking sheet or a large plate.
- Allow to cool completely.
