Ingredients
Vegetables
- 1/2 cup Potato chopped, sweet
- 1/2 cup Purple Yam chopped
- 1/2 cup Potato chopped
- 4 Eggplant small
- 1/2 cup Pea green
- 1/2 cup Carrot chopped
- 1/2 cup Pigeon Pea
- 1 cup Broad Beans
- 1 Banana chopped
Spice Paste
- 1/2 cup Garlic chopped, green
- 1/2 cup Coriander chopped
- 1 Chili chopped, green
- 1 tbsp Ginger chopped
- 1/2 cup Coconut grated
- 1/2 tsp Turmeric Powder
- 1 tbsp Garam Masala
Other Ingredients
- Salt to taste
- Sugar to taste
- 1 tbsp Raisin
- 1 tbsp Sesame Seed
- 1 tbsp Oil
- 1 tbsp Lemon Juice
- Water as needed
- 2 Rajasthani Chili
Methi Balls
- 1/2 cup Fenugreek Leaf dried, finely chopped
- 1 cup Gram Flour
- 1/2 cup Wheat Flour whole
- 2 tsp Salt
- 1 tsp Sugar
- 1 tbsp Lemon Juice
- 1 tbsp Oil
- Water as needed
- 1/2 tsp Turmeric Powder
- 2 tsp Coriander chopped
- 1 tbsp Sesame Seed
- 2 tsp Chili Powder
Instructions
Make the Methi Balls
- In a bowl, combine the dried fenugreek leaves, gram flour, whole wheat flour, salt, sugar, lemon juice, oil, turmeric powder, cilantro, sesame seeds, and chili powder.
- Gradually add water until a soft dough forms. Knead the dough for 2-3 minutes until smooth.
- Shape the dough into small balls. Set aside.
Prepare the Undhiyu
- Chop all the vegetables (sweet potato, yam, potato, eggplant, peas, carrots, pigeon peas, broad beans, banana) into bite-sized pieces.
- In a separate bowl, prepare the spice paste by combining the chopped green garlic, cilantro, green chili, ginger, grated coconut, turmeric powder, and garam masala.
- Add the chopped vegetables, salt, sugar, raisins, sesame seeds, oil, and lemon juice to the spice paste. Mix well to coat the vegetables evenly. Marinate for 15 minutes. This allows the flavors to meld.
- Stuff the spice mixture into the eggplants and chilies. This intensifies the flavor within these vegetables.
- Transfer the marinated vegetables and methi balls to a microwave-safe dish. Add 1 cup of water.
- Microwave on high for 6 minutes. Stir the vegetables and add more hot water if needed. Microwaving in stages ensures even cooking.
- Microwave again for another 6 minutes. Check for doneness; the vegetables should be tender. Continue microwaving in short bursts if needed.
