Ingredients
For the Khandvi Batter
- 1 cup Gram Flour besan
- 1 cup Yogurt curd
- 1 cup Broccoli finely chopped florets
- 1 cup Water
- 1 tbsp Italian Herbs basil, dried, such as oregano, thyme. a mix is ideal.
- 1.5 tsp Salt or to taste
- 1/2 tsp Turmeric Powder for color (optional)
For the Tempering
- 1 tbsp Vegetable Oil
- 2 tsp Sesame Seeds
Instructions
Prepare the Batter
- Blend the gram flour, yogurt, broccoli, water, Italian herbs, turmeric (if using), and salt in a blender until a very smooth batter forms.
Cook the Batter
- Heat a non-stick pan or heavy-bottomed pan over medium-low heat. Pour the batter into the pan and cook for 10-12 minutes, stirring continuously to prevent lumps and ensure even cooking. The batter is ready when it starts to leave the sides of the pan.
Spread and Cool
- Immediately pour the cooked batter onto a lightly oiled marble or granite surface or a large, flat plate. Spread it thinly and evenly using a spatula. Let it cool for 5-7 minutes.
Roll and Slice
- Once cooled, use a sharp knife to cut the batter into broad strips. Roll each strip tightly into a spiral. Slice each roll into smaller, 2-3 cm roundels.
Make the Tempering
- Heat the vegetable oil in a small pan. Add the sesame seeds and cook until they are lightly browned and fragrant.
Assemble and Serve
- Pour the tempering over the khandvi rolls. Serve warm or at room temperature with tea or your favorite beverage. Enjoy!
