  • In a large bowl, whisk together the gram flour, yogurt, water, turmeric powder, and salt until a smooth batter forms. Add the finely chopped green chilies. Let the batter rest for at least 15-20 minutes.

Cook the Batter

  • Heat a non-stick pan or griddle over medium heat. Pour a thin layer of batter onto the hot surface. Spread it evenly to create a thin crepe. Cook until the edges begin to lift and the bottom is lightly browned, about 2-3 minutes per side. Repeat until all the batter is used.

Roll and Garnish

  • Once the crepes are cool, carefully roll them tightly. Heat the oil in a small pan. Add the mustard seeds and let them splutter. Add the white sesame seeds and green chilies (if using). Pour this tempering over the khandvi rolls. Garnish with desiccated coconut and pomegranate seeds (optional).

  1. Gujarati Khandvi never garnished with Pomegranate seeds.. it is garnished with fresh grated coconut and coriander leaves.. and in tempering curry leaves along with mustard seed is must.. green chili and ginger paste is mixed in the batter.. Top of all it should be thinner as possible.. No hard feelings please.. 5 stars
