Ingredients
For the Khandvi Batter:
- 1 cup Gram Flour also known as besan or bengal gram flour
- 1 cup Yogurt also known as curd
- 2 cup Water
- 1 1/2 tsp Salt adjust to taste
- 1/2 tsp Turmeric also known as haldi
- 1/4 tsp Sugar
- 2 tsp Chili Paste adjust to your spice preference, green
For the Paneer Stuffing (choose one):
- 1/2 cup Paneer crumbled, indian cheese
- 1/4 cup Chutney green, your favorite recipe
- 1/2 cup Paneer crumbled, indian cheese
- 1/4 cup Tomato Sauce
For the Tempering:
- 1 tbsp Vegetable Oil
- 1/2 tsp Mustard Seeds
- A few Curry Leaves
Instructions
Prepare the Batter
- Mix chickpea flour, yogurt, water, salt, turmeric powder, sugar, and green chili paste in a bowl until smooth.
Microwave the Batter
- Strain the batter. Pour into a microwave-safe dish. Microwave on high for 2 minutes, stir, then microwave for another 5 minutes.
Prepare the Plates and Spread the Batter
- Lightly grease two large plates. Spread the batter evenly on each plate.
Add the Stuffing
- Let the batter set for 5-7 minutes. Spread your chosen paneer stuffing (either green chutney or tomato sauce) evenly over one plate of batter. Repeat with the other plate, using the alternate stuffing.
Roll the Khandvi
- Cut each plate of stuffed batter lengthwise into equal portions. Gently roll each portion into a tight roll.
Make the Tempering
- Heat oil in a small pan. Add mustard seeds and let them splutter. Add curry leaves. Pour the tempering over the rolled Khandvi.
Serve
