Ingredients
 

For the Khandvi Batter:

  • 1 cup Gram Flour also known as besan or bengal gram flour
  • 1 cup Yogurt also known as curd
  • 2 cup Water
  • 1 1/2 tsp Salt adjust to taste
  • 1/2 tsp Turmeric also known as haldi
  • 1/4 tsp Sugar
  • 2 tsp Chili Paste adjust to your spice preference, green

For the Paneer Stuffing (choose one):

  • 1/2 cup Paneer crumbled, indian cheese
  • 1/4 cup Chutney green, your favorite recipe
  • 1/2 cup Paneer crumbled, indian cheese
  • 1/4 cup Tomato Sauce

Instructions
 

Prepare the Batter

  • Mix chickpea flour, yogurt, water, salt, turmeric powder, sugar, and green chili paste in a bowl until smooth.

Microwave the Batter

  • Strain the batter. Pour into a microwave-safe dish. Microwave on high for 2 minutes, stir, then microwave for another 5 minutes.

Prepare the Plates and Spread the Batter

  • Lightly grease two large plates. Spread the batter evenly on each plate.

Add the Stuffing

  • Let the batter set for 5-7 minutes. Spread your chosen paneer stuffing (either green chutney or tomato sauce) evenly over one plate of batter. Repeat with the other plate, using the alternate stuffing.

Roll the Khandvi

  • Cut each plate of stuffed batter lengthwise into equal portions. Gently roll each portion into a tight roll.

Make the Tempering

  • Heat oil in a small pan. Add mustard seeds and let them splutter. Add curry leaves. Pour the tempering over the rolled Khandvi.

Serve
