Instructions

Prepare the Filling

  • Coarsely grind the green peas. Heat oil in a pan; add cumin seeds and asafoetida. Sauté until fragrant. Add onion and sauté for 1 minute.
  • Add ginger-garlic paste and sauté for 45 seconds. Reduce heat; add salt, red chili powder, garam masala, and green peas. Sauté for 2 minutes.
  • Add gram flour and amchur powder; sauté for 4-5 minutes. Remove from heat and let cool. Once cool, stir in coriander, green chilies, fennel seeds, carom seeds, and chaat masala.

Prepare the Dough

  • While the filling cools, gradually add water to the whole wheat flour, mixing to form a soft, pliable dough. Knead well and let rest for 15 minutes.

Make the Paratha

  • Heat a skillet over medium heat. Make equal-sized dough balls. Roll one ball into a 3-4 inch circle.
  • Place 1.5 tablespoons of filling in the center; seal the dough. Gently flatten and roll to 6 inches in diameter, using more flour as needed.
  • Cook the paratha on the skillet, flipping when the top changes color and the bottom has brown specks. Apply oil to one side, flip, and cook until crisp. Repeat with remaining dough balls.
  • Serve hot with butter, green chutney, pickle, yogurt, and/or chai.

Recipe Notes

Expert Tips for Perfect Matar Paratha

  • For extra flavor, lightly roast the fennel seeds before adding them to the filling.
  • If the dough is too sticky, add a little more flour. If it's too dry, add a teaspoon of water at a time.
  • Don't overcrowd the skillet; cook the parathas in batches to ensure even browning.
  • For extra crispy parathas, use a heavy-bottomed skillet and cook over medium-high heat.
