Ingredients
For the Filling
- 2 tbsp Vegetable Oil
- 0.5 tsp Cumin jeera
- 1/8 tsp Asafoetida hing
- 100 gm Onion finely chopped (approximately 0.5 cup), red
- 0.5 tsp Ginger-Garlic Paste
- 350 gm Peas green, shelled weight (approximately 2.75 cups)
- 1 tbsp Chili Pepper finely chopped, green
- 1 tsp Salt adjust to taste
- 0.5-1 tsp Chili Powder adjust to taste, red
- 0.5 tsp Garam Masala
- 1 tsp Mango Powder dried mango powder
- 2 tbsp Gram Flour besan
- 2-3 tbsp Coriander finely chopped (dhaniya patta), fresh
- 0.5-1 tsp Fennel lightly roasted, saunf
- 1/3 tsp Carom Seeds ajwain
- 1 tsp Chaat Masala
For the Dough
- 2.5 cup Wheat Flour plus extra for rolling, whole
- 1 cup Water or as needed
Instructions
Prepare the Filling
- Coarsely grind the green peas. Heat oil in a pan; add cumin seeds and asafoetida. Sauté until fragrant. Add onion and sauté for 1 minute.
- Add ginger-garlic paste and sauté for 45 seconds. Reduce heat; add salt, red chili powder, garam masala, and green peas. Sauté for 2 minutes.
- Add gram flour and amchur powder; sauté for 4-5 minutes. Remove from heat and let cool. Once cool, stir in coriander, green chilies, fennel seeds, carom seeds, and chaat masala.
Prepare the Dough
- While the filling cools, gradually add water to the whole wheat flour, mixing to form a soft, pliable dough. Knead well and let rest for 15 minutes.
Make the Paratha
- Heat a skillet over medium heat. Make equal-sized dough balls. Roll one ball into a 3-4 inch circle.
- Place 1.5 tablespoons of filling in the center; seal the dough. Gently flatten and roll to 6 inches in diameter, using more flour as needed.
- Cook the paratha on the skillet, flipping when the top changes color and the bottom has brown specks. Apply oil to one side, flip, and cook until crisp. Repeat with remaining dough balls.
- Serve hot with butter, green chutney, pickle, yogurt, and/or chai.
