Ingredients

- 1 tsp Cumin Seeds
- 1 tsp Ginger-Garlic Paste
- 1 tsp Turmeric Powder haldi
- 1 tsp Coriander Powder dhania
- 1 tsp Chili Powder adjust to your spice preference, red
- ½ tsp Garam Masala
Other Ingredients
- ⅓ cup Yogurt fresh, plain
- 1.5 tsp Salt or to taste
- 2 tbsp Coriander chopped for garnish, fresh
- 4 tbsp Cooking Oil vegetable or any neutral oil
- 1 cup Water or as needed
Instructions
Prepare the Spice Paste
- Combine the finely chopped onion and green chilies in a blender or food processor. Blend into a smooth paste.
Sauté Aromatics
- Heat the cooking oil in a large pan or kadhai over medium heat. Add the cumin seeds and let them splutter. Add the onion-chili paste and sauté for 3-4 minutes until fragrant.
Add Spices and Cook
- Add the ginger-garlic paste, turmeric powder, coriander powder, red chili powder, and garam masala. Sauté for another minute until the spices are fragrant and well combined.
Add Vegetables and Simmer
- Add the chopped potatoes and green peas to the pan. Mix well with the spiced onion mixture. Add 1 cup of water, bring to a simmer, cover the pan, and cook for 5-7 minutes, or until the potatoes are nearly tender.
Incorporate Yogurt and Finish
- Stir in the yogurt, making sure it's well incorporated with the vegetables and spices. Season with salt to taste. Cover and cook for another 3-5 minutes, allowing the flavors to meld. The curry is ready when the oil begins to separate from the gravy and the potatoes are cooked through. Garnish with chopped coriander leaves.
