Ingredients
 

For the Green Pea Filling:

  • 1 cup Peas fresh or frozen, green
  • 1 inch Ginger finely chopped
  • 2-4 Chilies adjust to taste, finely chopped, green
  • 0.75 - 1.5 tsp Salt to taste
  • 1 tsp Carom Seeds ajwain
  • 1 tbsp Oil vegetable oil for sautéing

For the Dough:

  • 2 cup Whole Wheat Flour atta, whole
  • ¾ - 1 cup Water add as needed to form a soft dough, approximately
  • 2-3 tbsp Ghee ghee, for cooking

Instructions
 

Prepare the Green Pea Filling

  • Grind green peas, ginger, and green chilies into a smooth paste using a food processor or blender.

Sauté the Filling

  • Heat oil in a pan. Add the green pea paste, salt, and carom seeds. Sauté for 2-3 minutes until fragrant and slightly cooked.

Make the Dough

  • In a large bowl, combine the whole wheat flour and salt. Gradually add water, mixing until a soft, pliable dough forms. Knead for 5-7 minutes until smooth and elastic.

Assemble and Cook the Parathas

  • Divide the dough into small balls. Roll each ball into a 6-inch circle. Spread a spoonful of the green pea filling evenly over the center.
  • Fold the dough over the filling to form a half-moon shape, then gently press the edges to seal.
  • Roll out the stuffed dough into a slightly thinner circle (about 5-7 inches).
  • Heat a lightly oiled griddle or tawa over medium heat. Cook the paratha on both sides, applying ghee to each side as it cooks, until golden brown and cooked through.
