For the Paratha Dough

  • 1 cup Whole Wheat Flour alternatively, use roti flour for a softer paratha., whole
  • 1 tsp Ghee clarified butter. can substitute with vegetable oil
  • 1/2 tsp Salt
  • 3/4 cup Water add gradually until a soft dough forms.

Prepare the Paratha Dough

  • Mix whole wheat flour, ghee, and salt. Gradually add water to form a soft dough. Knead well and set aside for at least 15 minutes.

Make the Vegetable Filling

  • Heat vegetable oil in a pan. Add sliced onions and sauté for 1 minute. Add carrots, bell peppers, and cabbage. Sauté for 4-5 minutes, seasoning with salt and pepper.

Prepare the Potato Cutlets

  • Mix mashed potatoes, green chilies, garam masala, salt, and coriander. Shape into small patties.
  • Heat vegetable oil in a pan and fry the cutlets until golden brown on both sides.

Make the Egg Bhurji

  • Heat vegetable oil in a pan. Sauté finely chopped onions and green chilies. Add eggs, garam masala, red chili powder, turmeric, and salt. Cook for 4-5 minutes, stirring occasionally, until the eggs are cooked through and slightly scrambled.

Assemble the Paratha Rolls

  • Divide the dough into equal portions. Roll each portion into a large circle using a rolling pin.
  • Cook the paratha on a hot griddle or pan until lightly browned on both sides.
  • Spread the vegetable filling, potato cutlets, and egg bhurji evenly over the cooked paratha.
  • Add mayonnaise, tomato sauce, and green chili sauce.
  • Fold the paratha over the filling to create a roll. Repeat with the remaining dough and fillings.
