  • Wash the basmati rice thoroughly under cold water until the water runs clear. This removes excess starch and impurities.
  • Soak the rice in cold water for at least 3-4 hours, or preferably overnight. Soaking helps the rice cook evenly and results in a softer texture.
  • Drain the soaked rice completely.
  • In a grinder, combine the drained rice, shredded coconut, and milk.
  • Coarsely grind the mixture. Do not over-grind; a slightly coarse texture is desirable.
  • Transfer the ground mixture to a large mixing bowl.
  • Add the chopped apple, sugar, pomegranate seeds, chenna, ground cardamom, and ground black pepper to the bowl.
  • Mix all the ingredients thoroughly until well combined.
  • Just before serving, peel and mash the ripe bananas.
  • Gently fold the mashed bananas into the rice mixture.
  • The final consistency should be semi-liquid.
  • Serve the Makar Chaula immediately and enjoy this Odia delicacy!
