  • Lightly crush the roasted peanuts, almonds, and cashews. Do not pulverize them; aim for a coarsely chopped consistency.

Toast the Nuts and Seeds

  • Heat sesame oil in a heavy-bottomed pan over medium heat. Add the crushed peanuts, almonds, cashews, and sesame seeds. Stir continuously for 5-7 minutes, until fragrant and lightly browned.

Add Sweeteners

  • Add the granulated sugar and grated jaggery to the pan. Stir constantly until the sugar melts and combines with the nuts and seeds, forming a thick, sticky mixture. This will take approximately 5-7 minutes, depending on your heat and the type of jaggery used.

Incorporate Flavoring

  • Stir in the rose water and cardamom powder (if using). Continue to cook and stir for another 2 minutes, until the mixture is slightly firm and no longer sticky. The mixture will come together to form a dough-like consistency.

Shape and Set

  • Lightly grease a baking tray with sesame oil or ghee (clarified butter). Spread the mixture evenly onto the tray and press down firmly using a knife or spatula to create a flat, even layer.

Garnish and Cool

  • Garnish the top with chopped cashews. Let the mixture cool completely before cutting into rectangular bars or smaller pieces.
