Instructions

Prepare the Pumpkin

  • Grate the pumpkin and thoroughly squeeze out any excess water. This step is crucial for preventing a watery kheer.

Toast the Nuts and Sauté the Pumpkin

  • Heat ghee in a non-stick pan over medium heat. Add the mixed nuts and sauté for about 1 minute until fragrant. Add the grated pumpkin and cook for 10-15 minutes, stirring occasionally, until the raw smell of pumpkin disappears.

Simmer the Milk

  • In a separate heavy-bottomed pan, bring the full cream milk to a gentle boil. Reduce heat to low and simmer, stirring frequently, until the milk slightly thickens. This prevents sticking and burning.

Combine and Finish

  • Add the cooked pumpkin mixture to the thickened milk. Stir in the sugar and ground nutmeg. Continue to simmer, stirring occasionally, until the kheer reaches your desired consistency (about 10-15 minutes).

Garnish and Serve

  • Remove from heat and stir in the crushed cardamom pods. Let the kheer cool slightly. Garnish with additional nuts, if desired. Serve warm or chilled. Enjoy!

Recipe Notes

Expert Tips for the Perfect Kaddu Ki Kheer

  • For a richer flavor, use full-fat coconut milk instead of (or in addition to) cow's milk.
  • Adjust the sugar quantity based on the sweetness of your pumpkin. Taste and adjust as needed.
  • If you don't have ghee, you can substitute with unsalted butter or vegetable oil, but ghee adds a distinct flavor.
  • For a smoother texture, blend a portion of the cooked kheer before adding it to the main batch. This will create a creamier consistency.
