Ingredients
 

Pumpkin Preparation

  • 1 cup Pumpkin grated; approximately 1 medium pumpkin, white
  • 1/2 cup Water for boiling and cooking the pumpkin

  • 1 tbsp Cashews cashewnuts, roasted and chopped

Instructions
 

Prepare the Pumpkin

  • Grate the white pumpkin and strain it through a fine-mesh sieve or cheesecloth to remove excess water. Set aside.

Roast the Cashews

  • Heat a small pan over medium heat. Add 1/2 tablespoon of desi ghee. Add cashews and roast until golden brown, stirring frequently. Remove and set aside.

Cook the Halwa

  • In a heavy-bottomed pan, bring 1/2 cup water to a boil. Add the strained pumpkin and saffron strands, stirring occasionally. Reduce heat to low and simmer until the pumpkin softens, about 10-15 minutes.

Add Sugar and Spices

  • Add the sugar and stir until it dissolves completely. Continue cooking until the mixture thickens slightly.

Finish the Halwa

  • Stir in the remaining 1/2 tablespoon of desi ghee, cardamom powder, and a tiny pinch of edible camphor (optional). Continue to cook until the halwa leaves the sides of the pan and becomes glossy and thick.

Serve

  • Remove from heat and stir in the roasted cashews. Serve warm or at room temperature. Enjoy!
