Ingredients
Pumpkin Preparation
Spices and Sweetener
- 3/4 cup Sugar granulated
- 1 tbsp Ghee
- 1/2 tsp Cardamom Powder elaichi
- 1 pinch Saffron Strands
- A tiny pinch Edible Camphor use sparingly, according to preference. optional.
Garnish
- 1 tbsp Cashews cashewnuts, roasted and chopped
Instructions
Prepare the Pumpkin
- Grate the white pumpkin and strain it through a fine-mesh sieve or cheesecloth to remove excess water. Set aside.
Roast the Cashews
- Heat a small pan over medium heat. Add 1/2 tablespoon of desi ghee. Add cashews and roast until golden brown, stirring frequently. Remove and set aside.
Cook the Halwa
- In a heavy-bottomed pan, bring 1/2 cup water to a boil. Add the strained pumpkin and saffron strands, stirring occasionally. Reduce heat to low and simmer until the pumpkin softens, about 10-15 minutes.
Add Sugar and Spices
- Add the sugar and stir until it dissolves completely. Continue cooking until the mixture thickens slightly.
Finish the Halwa
- Stir in the remaining 1/2 tablespoon of desi ghee, cardamom powder, and a tiny pinch of edible camphor (optional). Continue to cook until the halwa leaves the sides of the pan and becomes glossy and thick.
Serve
- Remove from heat and stir in the roasted cashews. Serve warm or at room temperature. Enjoy!
