Ingredients
Dry Ingredients
- ½ cup All-Purpose Flour
- ½ cup Semolina
- ½ cup Rice Flour
- 1-2 tsp Salt or to taste
For Serving
Instructions
- In a large bowl, whisk together the all-purpose flour, semolina, rice flour, and salt.
- Gradually add water to the dry ingredients, whisking constantly until a thin, smooth batter forms. The batter should be pourable but not too watery.
- Lightly brush a non-stick griddle or skillet with oil and heat over medium heat. Once hot, pour a ladleful of batter onto the griddle and quickly spread it into a thin circle using the back of the ladle.
- Cook for 1-2 minutes per side, or until golden brown and crispy. Flip the crepe when the edges start to lift and small bubbles appear on the surface.
- Spread a spoonful of coconut chutney over one half of the crepe. Fold the crepe in half or roll it up tightly.
- Serve the crepes immediately while they are warm and crispy.
- Enjoy!
Recipe Notes
Expert Tips
- For a richer flavor, consider using bone-in chicken thighs instead of boneless, skinless breasts.
- Adjust the cooking time based on the thickness of your chicken pieces. Use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F (74°C).
- Don't overcrowd the pan when browning the chicken. This will ensure even cooking and a nice sear.
Storage Instructions
- Store leftover chicken in an airtight container in the refrigerator for up to 3 days.
