Ingredients
Dals & Grains
- 0.5 cup Pigeon Pea split pigeon peas
- 0.5 cup Chickpea split chickpeas
- 0.25 cup Mung Bean split yellow lentils
- 0.25 cup Gram black, split black lentils
- 0.5 cup Rice brown
- 0.5 cup Rice parboiled, idli rice or similar long-grain variety
- 1 tsp Fenugreek Seeds
Spice Blend
- 4-5 Chili adjust to your spice preference, dried, red
- 4 Byadgi Chili for a deeper, optional, red, richer flavor
- 15 Garlic
- 1 Tamarind about lemon-sized
- 2 tbsp Fennel Seeds
Instructions
Prepare the Ingredients
- Wash and soak the toor dal, chana dal, moong dal, and urad dal together for at least 5 hours.
- Wash and soak the brown rice and parboiled rice with fenugreek seeds for at least 5 hours.
- Soak the red chilies in 1/4 cup water for at least 1 hour before grinding.
Grind the Batter
- In a blender, combine the soaked red chilies, fennel seeds, tamarind, garlic cloves, and salt.
- Grind into a smooth paste, adding water as needed.
- Add the soaked dals and rices to the blender. Grind until a smooth, dosa-consistency batter is achieved, adding water as needed. The batter should be neither too thin nor too thick.
- Transfer the batter to a large bowl.
Customize (Optional)
- Stir in the finely chopped onions, grated carrots, cilantro, and green chilies (if using).
Cook the Dosas
- Heat a dosa tawa (griddle) over medium heat. Lightly rub with oil.
- Pour a ladleful of batter onto the hot tawa, spreading it thinly into a circle.
- Drizzle oil around the edges of the dosa.
- Cook until golden brown on both sides, flipping when bubbles start to appear on the surface.
Serve
- Serve the spicy dal dosas hot, with your favorite chutney and a dollop of ghee (clarified butter).
