Ingredients
Dry Ingredients
- 1/2 cup All-Purpose Flour
- 1/4 cup Rice Flour
- 1/4 cup Whole Wheat Flour whole
- 1/2 tsp Chili Powder red
- 1/2 tsp Cumin ground cumin or jeera
- 1 tsp Salt or to taste
Vegetables
- 1 medium Onion finely chopped
- 1 medium Tomato finely chopped
- 1/2 Bell Peppers finely chopped
- 2 Chilies finely chopped (adjust to taste), green
Other
- 2 tbsp Oil for shallow frying, vegetable or cooking oil
Instructions
Prepare the Batter
- In a mixing bowl, whisk together all-purpose flour, rice flour, whole wheat flour, red chili powder, cumin, and salt. Gradually add water, mixing until a smooth, pourable batter forms. The consistency should be similar to pancake batter.
Prepare the Vegetables
- Finely chop the onion, tomato, bell pepper, and green chilies.
Cook the Tiffin
- Heat oil in a non-stick pan or griddle over medium heat. Pour a small amount of batter onto the hot pan, spreading it into a thin, even circle (about 6 inches in diameter).
- Cover the pan and cook for 2-3 minutes, or until the bottom is golden brown and cooked through. Flip the tiffin and cook the other side for another 1-2 minutes.
Add Filling and Eggs
- Spread the chopped onions, tomatoes, bell peppers, and green chilies evenly over the cooked side of the tiffin. Season lightly with salt.
- Crack one egg over the vegetable filling. Carefully cover the pan and cook for another 2-3 minutes, or until the egg is cooked to your liking.
Finish and Serve
- Carefully fold the tiffin in half. Slide it onto a plate and serve immediately. Repeat with remaining batter and eggs.
Recipe Notes
Expert Tips for the Perfect Egg Tiffin
- For a spicier tiffin, add more green chilies or a pinch of cayenne pepper to the batter.
- Feel free to add other vegetables to the filling, such as spinach, mushrooms, or potatoes.
- If you prefer a crispier tiffin, cook it over slightly higher heat and don't cover the pan while cooking the vegetables and eggs.
- For a richer flavor, add a teaspoon of ghee (clarified butter) to the pan along with the oil.
