  • In a large bowl, combine the whole wheat flour and semolina.
  • In a separate bowl, activate the yeast by combining it with the lukewarm milk and honey. Let it sit for a few minutes until foamy.

  • Add ¾ of the flour mixture to the yeast mixture. Stir thoroughly with a spoon to combine. This is the beginning of the autolyse process, which helps develop the gluten and create a softer crumb. Cover the bowl and let it rest for 30 minutes.

  • After 30 minutes, add the remaining flour and salt to the dough. Knead the dough, adding a little extra milk if needed, until it comes together.
  • Add the olive oil (or butter) and continue kneading for 14-15 minutes. The dough should be smooth, supple, and slightly softer than chapati dough. This extended kneading develops the gluten, creating a light and airy texture.
  • Place the dough in a lightly oiled bowl, cover with a damp kitchen towel, and let it rise in a warm place for about 3 hours, or until doubled in size.
  • Gently punch down the risen dough to release the air. On a lightly greased surface, roll the dough into a ½-inch thick rectangle.
  • Starting from one of the long edges, tightly roll the dough into a log. Place the log seam-down in a loaf pan lined with parchment paper. Cover and let it rise for another 30 minutes.

  • Preheat the oven to 200°C (400°F). Brush the top of the loaf with a little milk to create a golden crust.

  • Bake for 25-30 minutes, or until the crust is golden brown and the loaf sounds hollow when tapped on the bottom. Let the bread cool completely before slicing and serving.
