Ingredients
For the Dough
- 250 gm Whole Wheat Flour organic, whole
- 50 gm Fine Semolina suji
- 1 Tbsp Milk Powder
- 2 Tbsp Sugar
- 1/2 tsp Yeast
- 1 tsp Salt
- 1 cup Water or milk
- 2 Tbsp Olive Oil divided
For the Filling
- 1/4 cup Bell Peppers green, thinly sliced
- 1/3 cup Bell Peppers thinly sliced, yellow
- 1/3 cup Onion thinly sliced
- 3 tsp Chicken Salami torn into small pieces
- 2 Tbsp Mozzarella Cheese shredded
For the Pizza Sauce
- 1/2 tsp Pepper black
- 1/2 tsp Herbs mixed
- 1/2 tsp Chili Flakes
- 1/2 tsp Salt or to taste
Instructions
- In a large bowl, combine the whole wheat flour, semolina, milk powder, sugar, and yeast.
- Gradually add the water, mixing until a rough dough forms. Cover the bowl and let it rest for 20-30 minutes. This allows the flour to fully hydrate, resulting in a more extensible dough.
- Add the salt and 1 tablespoon of olive oil to the dough. Knead for 12-15 minutes on a lightly floured surface until the dough becomes smooth and elastic. Kneading develops the gluten, giving the bread its structure.
- Place the dough in a well-oiled bowl, turning to coat. Cover the bowl with plastic wrap and let it rise in a warm place for 1-2 hours, or until doubled in size.
- Punch down the dough to release the air. Roll it out into a rectangle on a lightly floured surface.
- Spread the pizza sauce evenly over the dough. Layer the sliced onions, bell peppers, chicken salami, mozzarella cheese, black pepper, mixed herbs, chili flakes, and salt over the sauce.
- Tightly roll the dough into a log, pinching the edges to seal. Place the rolled dough seam-down in a greased loaf pan.
- Cover the loaf pan with plastic wrap and let the dough rise for another 30-45 minutes, or until almost doubled.
- Preheat the oven to 375°F (190°C). Brush the top of the loaf with milk.
- Bake for 25 minutes, then brush with milk again for a golden crust. Continue baking for another 5-10 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and serve warm.
