Instructions

Prepare the Yeast

  • In a small bowl, combine 1/4 cup of warm water, 1 teaspoon of sugar, and the yeast. Let stand for 15 minutes until foamy.

Make the Dough

  • In a large bowl, combine the whole wheat flour and salt. Add the yeast mixture, remaining water (or water/milk mixture), and olive oil. Knead for 10-15 minutes until a smooth, elastic dough forms.

First Rise

  • Place the dough in a lightly oiled bowl, cover, and let rise in a warm place for 1-1.5 hours, or until doubled in size.

Shape the Bread

  • Punch down the dough and divide it into 6-8 equal portions. Roll each portion into a ball, then roll out into a thin oval shape. Spread a thin layer of melted butter and seasonings on each oval.

Assemble and Rise

  • Fold each oval into a semi-circle, pinching the edges to seal. Place the shaped bread on a baking sheet lined with parchment paper. Sprinkle with cheese, oregano, thyme, and pizza seasoning.

Second Rise and Bake

  • Let the bread rise for another 30 minutes. Preheat your oven to 400°F (200°C). Brush the bread with milk. Using a sharp knife, make a few deep cuts across the top. Bake for 10-12 minutes, or until golden brown.

Finishing Touch

  • Brush with melted butter immediately after baking for extra shine and flavor.
