Ingredients
For the Dough
- 3 cup Whole Wheat Flour atta, whole
- 1 1/4 cup Water lukewarm; or use a mixture of warm water and milk
- 1 tsp Sugar
- 1 tsp Active Yeast dry
- 4 tbsp Olive Oil
- 1.5 tsp Salt or to taste
For the Topping
- 40 grams Amul Cheese grated; or other similar cheese
- 3 tbsp Garlic minced; or use 3 tablespoons of herbed butter
- 2 tbsp Butter for brushing
- 1 tbsp Milk for egg wash
- 1 tsp Oregano dried
- 1/2 tsp Thyme dried, or other italian herbs
- 1/2 tsp Pizza Seasoning optional
Instructions
Prepare the Yeast
- In a small bowl, combine 1/4 cup of warm water, 1 teaspoon of sugar, and the yeast. Let stand for 15 minutes until foamy.
Make the Dough
- In a large bowl, combine the whole wheat flour and salt. Add the yeast mixture, remaining water (or water/milk mixture), and olive oil. Knead for 10-15 minutes until a smooth, elastic dough forms.
First Rise
- Place the dough in a lightly oiled bowl, cover, and let rise in a warm place for 1-1.5 hours, or until doubled in size.
Shape the Bread
- Punch down the dough and divide it into 6-8 equal portions. Roll each portion into a ball, then roll out into a thin oval shape. Spread a thin layer of melted butter and seasonings on each oval.
Assemble and Rise
- Fold each oval into a semi-circle, pinching the edges to seal. Place the shaped bread on a baking sheet lined with parchment paper. Sprinkle with cheese, oregano, thyme, and pizza seasoning.
Second Rise and Bake
