Instructions

Prepare the Yeast Mixture

  • Combine warm water/milk mixture with sugar. Stir until dissolved. Let cool slightly to lukewarm (105-115°F). Add yeast and let stand for 10 minutes until foamy.

Combine Dry and Wet Ingredients

  • In a large bowl, whisk together whole wheat flour, all-purpose flour (if using), salt. Add the bloomed yeast mixture and oil.

Knead the Dough

  • Begin kneading the dough. It will be sticky initially. Knead for 10-15 minutes until smooth and elastic. Add a little milk if needed to achieve a slightly moist consistency.

First Rise

  • Grease a large bowl and place the dough inside. Cover tightly with plastic wrap and let rise in a warm place for 1-2 hours, or until doubled in size.

Shape and Second Rise

  • Gently punch down the dough. Divide into 8-10 equal-sized portions. Roll each portion into a smooth ball. Place the balls on a greased baking sheet leaving some space between each bun for rising.
  • Cover loosely and let rise for another 25-30 minutes.

Bake the Buns

  • Preheat oven to 375°F (190°C). Brush the buns with milk. Bake for 15-20 minutes, or until golden brown.

Finishing Touches

  • Remove from oven and immediately brush with melted butter for a glossy finish. Let cool completely on a wire rack before serving.

Recipe Notes

Expert Tips for Perfect Pav Buns:

  • Use a kitchen scale for accurate ingredient measurements for best results.
  • If your dough feels too dry, add a tablespoon of water at a time until it reaches the desired consistency. Too wet, add flour, a tablespoon at a time.
  • The rising time may vary depending on the temperature and humidity of your environment.
  • For extra flavour, add a teaspoon of cardamom powder or other spices to the dough.
