Prepare the Dough

  • Combine whole wheat flour, yeast, sugar, salt, garlic powder, oregano, red pepper flakes, basil, and thyme in a large bowl. Add garlic paste and mix well.
  • In a separate bowl, combine warm milk and softened butter. Mix until butter is melted.
  • Add the warm milk mixture to the dry ingredients. Gradually add warm water, kneading until a soft, smooth dough forms. Knead for at least 10 minutes.
  • Grease a large bowl, place the dough inside, cover, and let rise in a warm place for 1-2 hours, or until doubled in size.

Prepare the Filling and Cheese Sauce

  • While the dough rises, prepare the filling: Combine cooked corn, finely chopped bell pepper, salt, and pepper.
  • For the (optional) cheese sauce, melt cheese with a little milk in a double boiler, stirring frequently until smooth and creamy. (Note: The original recipe's instructions for cheese sauce are not clear and may result in a curdled sauce, this is a better alternative.)

Assemble and Bake the Bread Sticks

  • Punch down the risen dough and divide it into 3 equal portions. Shape each portion into a ball and let rest, covered, for 10 minutes.
  • Sprinkle cornmeal on a clean work surface. Roll out one dough ball into a 1/2-inch thick circle.
  • Brush with melted butter and sprinkle with the spice mix (from the initial dough mixing). Spread half of the circle with the prepared veggie filling and top with shredded cheese. Fold the other half of the dough over the filling to create a half-moon shape.
  • Carefully transfer the stuffed dough to a parchment-lined baking sheet or baking rack. Lightly score the dough to mark individual breadsticks. Repeat with the remaining dough.
  • Brush the breadsticks generously with melted butter and sprinkle with the remaining spice mix.
  • Bake in a preheated oven at 200°C (400°F) for 20-25 minutes, or until golden brown. Let cool slightly before slicing into breadsticks and serving warm.
