Instructions

  • In a bowl, combine the lukewarm water, sugar, and yeast. Set aside until foamy. This activates the yeast and ensures a good rise.
  • In a large bowl, whisk together the semolina, whole wheat flour, garlic powder, and salt.
  • Add the yeast mixture and olive oil to the dry ingredients. Mix until a shaggy dough forms.

  • Turn the dough out onto a lightly floured surface. Knead for 10-15 minutes, or until smooth and elastic. Kneading develops the gluten, which gives the bread its structure.
  • Place the dough in a greased bowl, turning to coat. Cover and let rise in a warm place for 40 minutes, or until doubled in size.

  • Punch down the dough to release the air. Gently knead it again and shape it into a loaf.
  • Place the loaf in a greased loaf pan. Cover loosely with greased plastic wrap and let rise for another 30-40 minutes.
  • Preheat oven to 400°F (200°C).
  • Brush the top of the loaf with milk. Bake for 35 minutes, or until golden brown and the internal temperature reaches 200°F (93°C). If the top browns too quickly, tent it with foil.
  • Remove the bread from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Brush with olive oil or butter while still warm for added flavor and a soft crust.

Recipe Notes

Good To Know

  • For an aromatic twist, add a teaspoon of dried herbs such as rosemary, oregano, or thyme to the dough along with the garlic powder.
  • For a slightly sweeter loaf, increase the granulated sugar by 1-2 tablespoons and add a handful of raisins or chopped dried figs during the final kneading stage.
  • For a crispier crust, place a shallow tray of water in the bottom of your oven during the first half of baking.

Expert Tips

  • Use high-quality bread flour for the best texture and rise.
  • Don't overknead the dough, as this can lead to a tough loaf.
  • Check the bread's internal temperature with an instant-read thermometer; it should reach 200-210°F (93-99°C) for full doneness.

Storage Instructions

  • Store leftover bread wrapped in a clean kitchen towel or parchment paper (not plastic) to maintain its crust and prevent sogginess.
  • Refresh slices in a toaster or warm oven before serving.
