Ingredients
Dairy
- 250 ml Milk
- 1 can (approx. 397g) Sweetened Milk condensed
Nuts
Optional additions
- 1/4 tsp Cardamom for extra flavor, powder
- 2 tbsp Rose Water for aroma and flavor, optional
Instructions
Prepare the Ingredients
- Chop the apricots, prunes, and raisins. Roughly chop the almonds, walnuts, hazelnuts, and cashews.
Boil the Milk
- In a heavy-bottomed saucepan, bring the full cream milk to a boil over medium heat. Stir occasionally to prevent sticking or burning.
Add Ingredients and Simmer
- Reduce the heat to low. Add the chopped dried fruits and nuts to the boiling milk. Stir well to combine. Add the condensed milk and stir continuously.
Finish and Pour
- Continue to stir for another 3-5 minutes. If using, add cardamom powder and rose water. Remove from heat. Pour the mixture into kulfi molds or small containers.
Freeze
- Cover the molds tightly and freeze for at least 6-8 hours, or preferably overnight, until solid.
Serve
- To serve, run the molds under warm water for a few seconds to loosen the kulfi. Invert the kulfi onto serving plates and enjoy!
Recipe Notes
Expert Tips for the Perfect Kulfi
- For extra creaminess, use full-fat coconut milk in addition to or instead of some of the dairy milk.
- If you don't have kulfi molds, you can use small paper cups or ramekins.
- Experiment with different types of nuts and dried fruits to create your own unique flavor combinations. Pistachios and saffron are also excellent additions.
- For a smoother texture, blend the mixture briefly before freezing. Be careful not to over-blend, as some texture is desirable.
