Ingredients
 

Grains & Liquids

  • 1/2 cup Barley oo mugi; pearl barley is recommended for best results.
  • 1 cup Milk whole milk recommended for creaminess, but any milk can be used.
  • 1/2 cup Water adjust amount as needed for desired consistency.

Sweeteners & Spices

  • 2 tbsp Sugar adjust to your preferred sweetness. honey or maple syrup can be substituted.
  • 1/2 tsp Cardamom Powder elaichi; ground cardamom is preferred for a smoother texture.
  • 2 drops Kewra Water optional, for a delicate floral aroma.

Nuts & Other

  • 1/2 cup Almonds crushed; slivered almonds can also be used.
  • 2 tsp Coconut Paste thick coconut milk can be substituted.

Instructions
 

Prepare the Barley

  • Rinse the barley under cold water.
  • Combine barley and water in a saucepan and bring to a boil over medium-high heat.
  • Reduce heat to low, cover, and simmer for approximately 30-40 minutes, or until the barley is tender and the liquid is absorbed.
  • Stir occasionally to prevent sticking.

Create the Creamy Almond Mixture

  • While the barley is cooking, heat the milk in a separate saucepan over medium heat. Do not boil.
  • Once the barley is cooked, add it to the warm milk.
  • Stir in the sugar, crushed almonds, coconut paste, and cardamom powder.
  • Stir until the sugar is dissolved and the mixture is well combined.

Finish and Serve

  • Remove from heat and stir in the keora essence (if using).
  • Serve warm and enjoy!
