Ingredients
Mangoes
- 3 Mangoes alphonso mangoes recommended, ripe
Dairy
- 1 ltr Milk whole milk recommended for creaminess
- 1/4 cup Heavy Cream optional, but enhances richness

- 1/2 cup Sugar adjust to your sweetness preference

Instructions
Prepare the Mangoes
- Cut one mango into small pieces and set aside for later. Puree the remaining two mangoes using a blender until completely smooth.
Reduce the Milk Mixture
- In a heavy-bottomed saucepan, combine the milk, heavy cream (if using), and sugar. Add cardamom powder if using. Cook over medium heat, stirring frequently, until the mixture reduces by approximately half and slightly thickens. This will take about 20-30 minutes. Allow the mixture to cool completely.
Combine and Blend
- Gently stir the mango puree into the cooled milk mixture. Blend until completely smooth and creamy. Pour the mixture into a container and freeze for 1 hour. Remove from freezer and blend again to prevent ice crystal formation. Repeat this process 2-3 times for a supremely smooth kulfi.
Add Mango Pieces and Freeze
- Gently fold in the reserved chopped mango pieces. Pour the mixture into kulfi molds or small containers. If using sticks, insert them now. Freeze for at least 6-8 hours, or preferably overnight, until the kulfi is completely solid.
Serve
- Remove the kulfi from the freezer about 10-15 minutes before serving to allow it to soften slightly. Serve immediately and enjoy!
