Ingredients
Rice and Grains
- 3 cup Basmati Rice cooked according to package directions
- 1/2 cup Peas cooked, fresh or frozen, green

- 1 Apple chopped, cored, peeled
- 2 tbsp Onion finely chopped, optional
- 3 tbsp Pomegranate Seeds

Instructions
Prepare the Nuts
- Dry roast cashews and walnuts in a dry pan until lightly browned. Set aside.
Sauté Aromatics
- Heat ghee in the same pan. Add cumin seeds, bay leaf, cinnamon stick, and cloves. Sauté for 30 seconds until fragrant.
Add Onion (Optional)
- If using, add chopped onions and sauté until golden brown.
Combine Ingredients
- Add cooked basmati rice, salt, garam masala, coriander powder, black pepper, green peas, chopped apple, pomegranate seeds, dried cherries, roasted cashews, walnuts, and raisins. Mix well to combine.
Cook the Pulao
- Cook for 2-3 minutes on medium heat, stirring occasionally, until heated through and well combined. Do not overcook.
Serve
- Serve the Himachali Pulao hot.
