Ingredients
 

Dairy & Sweeteners

  • 1 ltr Milk whole milk recommended for creaminess
  • 250 grams Milk Solids mawa, also known as khoa; a type of concentrated milk solids
  • 150 grams Sugar adjust to your preferred sweetness

Spices & Flavorings

  • 1/4 tsp Saffron saffron strands, for color and flavor; steep in warm milk before adding

Garnish

  • 50 grams Nuts almonds, cashews, chopped pistachios, etc., mixed
  • Optional Rose Petals for added aroma and visual appeal

Preparing the Kulfi Base

  • Simmer 1 liter of whole milk in a heavy-bottomed pan over medium-low heat. Stir frequently to prevent scorching. Continue simmering until the milk reduces by half, approximately 45-60 minutes. This creates a rich and creamy base.

Incorporating Khoya and Saffron

  • Once the milk is reduced, add 250 grams of khoya and stir well to combine. Cook for another 5 minutes, stirring constantly. In a small bowl, steep 1/4 teaspoon of saffron strands in 2 tablespoons of warm milk for 10-15 minutes to release its color and flavor. Add the saffron milk to the kulfi mixture.

Sweetening and Blending

  • Stir in 150 grams of sugar (or to taste). Cook for another 5-10 minutes, until well combined and slightly thickened. Remove from heat and let the mixture cool completely. Once cooled, blend the mixture in a blender until completely smooth and creamy.

Freezing and Churning

  • Pour the blended kulfi mixture into a freezer-safe container. Freeze for 2-3 hours until partially solid. Then, churn the mixture using an ice cream maker (or by manually mixing every 30 minutes) for even texture. Repeat the freezing and churning process 2-3 times to prevent large ice crystals from forming.

Setting and Serving

  • Pour the kulfi mixture into kulfi molds (or small cups/ramekins). You can garnish with a few rose petals if desired. Freeze for at least 7-8 hours, or overnight, until the kulfi is completely solid. To serve, carefully remove the kulfi from the molds. Garnish with chopped nuts and serve immediately.
