Ingredients
Dry Ingredients
- 3 cup Rolled Oats
- 1 cup Oat Bran
- ¾ cup Wheat Germ
- ¼ cup Pepitas pumpkin seeds
- ¼ cup Watermelon Seeds
- ⅛ cup Sunflower Seeds
- ½ cup Almonds chopped
- ½ cup Pecans chopped
- ⅛ cup Walnuts chopped
- ½ tsp Salt or to taste
Wet Ingredients
- 3 Tbsp Sugar brown
- 1 tsp Cinnamon ground
- ¼ cup Pure Maple Syrup
- ¼ cup Honey organic
- ½ cup Olive Oil or any neutral oil
- 1 tsp Vanilla Extract optional
Dried Fruit
- ¼ cup Blueberries dried
- ⅛ cup Currants black, dried
- ⅛ cup Raisins
Instructions
- Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper. This prevents sticking and ensures even browning.
- In a large bowl, combine the rolled oats, oat bran, wheat germ, pepitas, watermelon seeds, sunflower seeds, chopped almonds, chopped pecans, chopped walnuts, and salt.
- In a separate bowl, whisk together the brown sugar, cinnamon, maple syrup, honey, olive oil, and vanilla extract until smooth and glossy.
- Pour the wet ingredients over the dry ingredients and stir gently to coat everything evenly.
- Spread the granola mixture in a thin, even layer on the prepared baking sheet.
- Bake for 15 minutes, then remove from the oven and stir gently. This ensures even toasting.
- Return the granola to the oven and bake for another 10 minutes, then stir again.
- Bake for a final 5-10 minutes, or until the granola is golden brown and fragrant. Keep a close eye on it to prevent burning.
- Remove the granola from the oven and immediately stir in the dried blueberries, black currants, and raisins.
- Let the granola cool completely on the baking sheet. As it cools, it will crisp up.
- Once cooled, store the granola in an airtight container, preferably glass, at room temperature for up to 2 weeks.
Recipe Notes
Good To Know
- Clean and sort the ingredients before baking.
- Use good quality ingredients to avoid debris in your granola.
- High-quality maple syrup enhances the flavor.
- Be creative with ingredients, but maintain a dry to wet ingredient ratio of at least 6:1 (7:1 is recommended).
- Keep all ingredients readily available while baking to speed up the process.
- Baking times and temperatures may vary depending on the oven and baking tray size. A larger tray allows for a single layer and potentially shorter baking time.
- Bake until golden brown.
Expert Tips
- For a more intense flavor, toast the nuts and seeds separately before adding them to the granola mixture.
- Customize your granola by adding dried fruits, chocolate chips, or coconut flakes after baking.
- If your granola becomes too clumpy, break it apart with your hands or a spoon after it cools.
Storage Instructions
- Store the cooled granola in an airtight container at room temperature for up to 2 weeks.
- For longer storage, freeze the granola in a freezer-safe container for up to 3 months.
