Ingredients
Dry Ingredients
- 2 cup Rolled Oats old-fashioned rolled oats
- 1/2 cup Cranberries dried
- 1/2 cup Almonds slivered
- 1/2 cup Corn Flakes
- 1/2 cup Pecans roughly chopped
- 2 tbsp Seeds e.g., mixed, pumpkin, sunflower
- 2 tbsp Coconut Sugar
Wet Ingredients
- 1 tbsp Honey
- 1/4 cup Coconut Oil melted
- 1/2 tsp Himalayan Salt pink
- 3 tbsp Maple Syrup
Instructions
Prepare the Oven and Baking Sheet
- Preheat your oven to 320°F (160°C). Line a large baking sheet with parchment paper.
Combine Dry Ingredients
- In a large mixing bowl, combine the rolled oats, dried cranberries, slivered almonds, corn flakes, pecans, mixed seeds, and coconut sugar. Mix well to distribute evenly.
Prepare the Wet Ingredients
- In a small saucepan, combine the melted coconut oil, honey, Himalayan pink salt, and maple syrup. Stir continuously over low heat until the coconut oil is completely melted and the mixture is smooth and well combined.
Combine Wet and Dry Ingredients
- Pour the wet ingredient mixture over the dry ingredients in the large bowl. Gently stir until all the dry ingredients are evenly coated with the wet mixture. Be careful not to overmix.
Bake the Granola
- Spread the granola mixture evenly onto the prepared baking sheet. Bake for 40-45 minutes, or until golden brown and crispy, stirring halfway through to ensure even baking. Keep a close eye on it to prevent burning.
Cool and Store
- Remove the granola from the oven and let it cool completely on the baking sheet before breaking it into smaller clusters. Once cooled, store your granola in an airtight container at room temperature for up to 2 weeks.
Recipe Notes
Expert Tips for the Perfect Granola
- Customize Your Mix-ins: Feel free to add your favorite nuts, seeds, dried fruits, or spices to personalize your granola. Chocolate chips, shredded coconut, or chopped pretzels are also great options!
- Adjust Sweetness: If you prefer a less sweet granola, reduce the amount of coconut sugar, honey, and maple syrup. Taste the mixture before baking to ensure it's to your liking.
- Watch for Burning: Granola can burn easily, so keep a close eye on it while it's baking. Start checking for doneness around the 35-minute mark.
- Cooling is Key: Allow the granola to cool completely before breaking it into clusters. This helps it crisp up and prevents it from becoming mushy.
