Make the Custard Base

  • Whisk together the egg yolks and sugar in a medium bowl until pale and slightly thickened. In a separate saucepan, heat the milk, heavy cream, and salt over medium heat until small bubbles begin to form around the edges. Do not boil.

Temper the Eggs

  • Slowly pour about 1/3 of the hot cream mixture into the egg yolk mixture, whisking constantly to temper the eggs. This prevents them from scrambling. Pour the tempered egg mixture back into the saucepan with the remaining cream mixture.

Cook the Custard

  • Cook over low heat, stirring constantly with a spatula or whisk, until the custard thickens enough to coat the back of a spoon (about 5-7 minutes). Do not boil. Remove from heat and stir in the vanilla extract.

Cool and Freeze

  • Pour the custard through a fine-mesh sieve into a bowl to remove any lumps. Press a piece of plastic wrap directly onto the surface of the custard to prevent a skin from forming. Refrigerate for at least 4 hours, or preferably overnight.

Churn and Freeze

  • Once chilled, gently fold in the chocolate chips. Churn the mixture in an ice cream maker according to the manufacturer's instructions. Once churned, transfer the ice cream to an airtight container and freeze for at least 4 hours to allow it to harden.
