Instructions
Make the Cookies
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually add the flour, mixing until just combined. Be careful not to overmix.

- Roll the cookie dough into 1-inch balls and place them 2 inches apart on the prepared baking sheets.
- Flatten each ball slightly with the bottom of a glass or measuring cup.
- Bake for 12-15 minutes, or until the edges are lightly golden brown.
- Let the cookies cool completely on the baking sheets before transferring them to a wire rack.

- Top with another cookie to create a sandwich.
- Immediately roll the edges of the sandwich in mini chocolate chips or sprinkles.
- Serve immediately or freeze for later (if freezing, wrap individually in plastic wrap or place in airtight container).
Recipe Notes
Expert Tips for Perfect Ice Cream Sandwiches:
- For perfectly soft cookies, don't overbake them. Start checking for doneness around 12 minutes.
- Slightly underbaked cookies will result in a softer, chewier sandwich.
- Use high-quality vanilla ice cream for the best flavor.
- For a fun twist, try different types of ice cream or add other mix-ins to your cookies, such as nuts or dried fruit.
