  • Prepare the lamb. Remove the lamb loin from the rack and set aside one lamb chop.
  • Marinate the lamb loin and chop with rosemary sprigs, olive oil, mustard seeds, salt, and pepper. Refrigerate for 1 hour to allow the flavors to meld.

Herb Crust

  • Make the herb crust. Combine chopped parsley, rosemary, thyme, and lemon zest in a blender or food processor.
  • Pulse until finely chopped but not completely pulverized. Set aside.
  • Prepare the vegetables. Peel the carrot and cut into matchsticks. Cut the zucchini into matchsticks as well. Trim the ends of the asparagus spears.
  • Blanch the prepared vegetables in boiling water until slightly tender. Immediately plunge them into ice water to stop the cooking process and preserve their vibrant color.

Nero d'Avola Sauce

  • In a saucepan over medium heat, bring the Nero d'Avola wine to a simmer and reduce slightly. This concentrates the wine's flavor and adds depth to the sauce.
  • Add the demi-glace to the reduced wine and continue to simmer until the sauce thickens slightly. Season with salt and pepper to taste. Finish with a pat of butter for richness and gloss.

Parsienne Potatoes

  • Peel the potatoes and use a melon baller to create small, uniform spheres. Alternatively, you can cut the potatoes into small, even-sized pieces.
  • Cook the potatoes in boiling salted water until tender. Drain and set aside.
  • Sear the lamb. Heat olive oil in a pan over medium-high heat. Sear the lamb loin and chop on all sides until nicely browned. Searing locks in the juices and creates a flavorful crust.
  • Coat the seared lamb with mustard seeds and then press into the prepared herb crust, ensuring it adheres evenly.
  • Preheat oven to 200°C (400°F). Roast the lamb chop for 7 minutes. Add the lamb loin to the oven when the chop has 5 minutes remaining.
  • Sauté the blanched vegetables in olive oil with salt and pepper until heated through and slightly tender.
  • In a pan, sauté minced garlic in olive oil until fragrant. Add the parsienne potatoes and toss to coat.
  • Add chopped parsley to the potatoes and toss. Season with salt to taste.
  • Plate the dish. Arrange the lamb loin and chop on opposite sides of the plate, leaving space for the vegetables.
  • Arrange the sautéed vegetables and parsienne potatoes alongside the lamb as desired.
  • Heat the Nero d'Avola sauce and drizzle it over the lamb. Garnish as desired and serve immediately.
