Ingredients
For the Crispy Roti Chips:
- 5-6 Chapati leftover chapatis; can also use store-bought
- 1/2 cup Vegetable Oil or enough for deep frying
For the Rajma Filling:
- 1 cup Rajma kidney beans, cooked; soak overnight and pressure cook for 8-10 whistles or until tender
For the Creamy Herb Sauce:
- 1 tbsp All-Purpose Flour
- 1 tbsp Butter
- 1 cup Milk whole milk preferred
- 1 tsp Salt or to taste
- 1/2 tsp Pepper black, freshly ground, preferred
- 2 oz Cheese grated cheddar or mozzarella
- 1 tsp Italian Herbs dried, mixed
For the Toppings:
- 1 Onion finely chopped
- 1 Tomato finely chopped
- 1/4 cup Coriander chopped, fresh
- 1/2 tsp Garam Masala
- 1/2 tsp Chaat Masala
Instructions
Prepare the Rajma
- Soak the rajma overnight and pressure cook until tender (about 8-10 whistles).
Make the Creamy Herb Sauce
- In a non-stick pan, melt the butter. Whisk in the all-purpose flour until lightly pink. Gradually whisk in the milk, stirring constantly until a medium-thick sauce forms. Season with salt and pepper. Stir in the grated cheese and Italian mixed herbs until melted and smooth.
Fry the Roti Chips
