Ingredients
 

Sweet Potatoes

  • 2 Potatoes approximately 500g, large, sweet

Aromatics & Spices

  • 5 clove Garlic minced or finely chopped
  • 1 tsp Peppercorns black, crushed
  • 1 tsp Rock Salt sendha namak (himalayan pink salt) or sea salt

Dairy & Herbs

  • 1.5 cup Amul Cheese mozzarella, or parmesan), shredded (or substitute with cheddar
  • 12.5 leaves Basil coarsely chopped, or 1 tbsp dried basil

Instructions
 

Prepare the Sweet Potatoes

  • Peel the sweet potatoes and cut into 1-inch cubes. Boil in a pot of lightly salted water for about 10-12 minutes until tender but not mushy. Drain well and set aside to cool.

Prepare the Baking Tray

  • Preheat oven to 350°F (180°C). Lightly grease a baking sheet or casserole dish with olive oil.

Combine and Bake

  • In a large bowl, combine the cooked sweet potatoes, minced garlic, crushed black peppercorns, rock salt, shredded Amul cheese and chopped basil. Gently toss to combine.
  • Transfer the sweet potato mixture to the prepared baking sheet.
  • Bake for 35-45 minutes, or until the sweet potatoes are tender and slightly caramelized, and the cheese is melted and bubbly.

Serve

  • Serve warm as a side dish or a main course. Enjoy!
