Ingredients
Sweet Potatoes
- 2 Potatoes approximately 500g, large, sweet
Aromatics & Spices
- 5 clove Garlic minced or finely chopped
- 1 tsp Peppercorns black, crushed
- 1 tsp Rock Salt sendha namak (himalayan pink salt) or sea salt
Dairy & Herbs
- 1.5 cup Amul Cheese mozzarella, or parmesan), shredded (or substitute with cheddar
- 12.5 leaves Basil coarsely chopped, or 1 tbsp dried basil
Fat
- 3 tbsp Olive Oil
Instructions
Prepare the Sweet Potatoes
- Peel the sweet potatoes and cut into 1-inch cubes. Boil in a pot of lightly salted water for about 10-12 minutes until tender but not mushy. Drain well and set aside to cool.
Prepare the Baking Tray
- Preheat oven to 350°F (180°C). Lightly grease a baking sheet or casserole dish with olive oil.
Combine and Bake
- In a large bowl, combine the cooked sweet potatoes, minced garlic, crushed black peppercorns, rock salt, shredded Amul cheese and chopped basil. Gently toss to combine.
- Transfer the sweet potato mixture to the prepared baking sheet.
- Bake for 35-45 minutes, or until the sweet potatoes are tender and slightly caramelized, and the cheese is melted and bubbly.
Serve
- Serve warm as a side dish or a main course. Enjoy!
