Ingredients
Potatoes & Aromatics
- 3 medium Russet Potatoes scrubbed and dried
- 4 clove Garlic minced
- 2 tbsp Parsley chopped, fresh
- 1 tbsp Thyme chopped, fresh
Cheese & Seasoning
- 6 slices Cheddar Cheese or your favorite melting cheese
- 1 medium Tomato thinly sliced
- 1.5 tsp Salt
- 0.5 tsp Pepper black, freshly ground
- 2 stalks Onions finely chopped, for garnish, green
Instructions
Preparation
- Scrub and thoroughly dry three medium russet potatoes.
- Preheat oven to 410°F (210°C). Line a baking sheet with aluminum foil.
- Cut off a small portion from the bottom of each potato to create a flat base for stability.
- Using a sharp knife, make thin, parallel slices almost all the way through each potato, leaving about ⅛ inch uncut at the bottom to keep the potato intact.
Garlic Herb Butter
- In a small saucepan, melt butter and olive oil over medium heat. Add minced garlic, parsley, and thyme. Cook for 2-3 minutes, or until fragrant. Remove from heat.
Baking the Potatoes
- Brush the garlic herb butter generously over the potatoes, including the bottom. Season with salt and pepper.
- Place potatoes on the prepared baking sheet and bake for 20 minutes.
- Carefully remove the baking sheet from the oven. Gently separate the potato slices using a butter knife. Insert a few slices of tomato and a bit more garlic herb butter in between some of the slices.
- Bake for another 20 minutes.
- Remove from oven again, add cheddar cheese slices into the gaps between the potato slices.
- Bake for a final 15 minutes, or until the cheese is melted and bubbly and the potatoes are tender and golden brown.
- Garnish with chopped green onions and serve immediately.
