Ingredients
For the Lamb Chops
For the Barbecue Sauce
- 1 tbsp Lemon Juice freshly squeezed
- 20 ml Cider Vinegar
- 1/2 tsp Sugar brown
- 10 ml Worcestershire Sauce
- 120 ml Tomato Ketchup
- 10 gm Gherkins finely chopped
- 3 gm Mustard Powder
For the Mashed Potatoes
For the Buttered Carrots
- 250 gm Baby Carrots
- 1 tbsp Olive Oil
- 1/4 tsp Salt to taste
- 1/4 tsp Pepper black, freshly ground, to taste
- 1 tbsp Butter for carrots
Instructions
Prepare the Lamb Chops
- Clean the lamb chops and marinate them with 1 tbsp olive oil, salt, pepper, minced garlic, and chopped rosemary. Set aside.
Make the Barbecue Sauce
- In a pan over low heat, sauté finely chopped gherkins in 1 tbsp olive oil. Add lemon juice, cider vinegar, brown sugar, Worcestershire sauce, tomato ketchup, and mustard powder. Stir well.
- Simmer for 10 minutes. Remove from heat and let cool.
Prepare the Mashed Potatoes
- Wash, peel, and dice the potatoes into large chunks. Boil in salted water until very soft.
- Strain the potatoes and mash thoroughly.
- In a separate pot, melt butter and cream. Add the mashed potatoes, salt, and pepper. Stir to combine.
Cook the Lamb Chops
- Grill the lamb chops on both sides until nicely browned. Transfer to a preheated oven (180°C/350°F) for 10 minutes, or until cooked to your desired doneness.
Glaze the Lamb Chops
- Pour the barbecue sauce into a hot pan. Reduce slightly, then stir in a bit of butter to create a glossy glaze.
- Add the cooked lamb chops to the sauce, turning to coat them evenly in the glaze.
Prepare the Buttered Carrots
- Steam or boil baby carrots until tender-crisp. Toss with olive oil, salt, pepper, and 1 tbsp of butter.
Plate the Dish
- Create a bed of mashed potatoes on a plate. Arrange the buttery carrots alongside. Place the barbecue glazed lamb chops on top and serve immediately.
