Ingredients
 

For the Lamb Chops

  • 2 Potatoes large, peeled and diced
  • 1 tbsp Butter unsalted
  • 1 tbsp Cream heavy cream
  • 1/2 tsp Salt to taste
  • 1/4 tsp Pepper black, freshly ground, to taste

Prepare the Lamb Chops

  • Clean the lamb chops and marinate them with 1 tbsp olive oil, salt, pepper, minced garlic, and chopped rosemary. Set aside.

Make the Barbecue Sauce

  • In a pan over low heat, sauté finely chopped gherkins in 1 tbsp olive oil. Add lemon juice, cider vinegar, brown sugar, Worcestershire sauce, tomato ketchup, and mustard powder. Stir well.
  • Simmer for 10 minutes. Remove from heat and let cool.

Prepare the Mashed Potatoes

  • Wash, peel, and dice the potatoes into large chunks. Boil in salted water until very soft.
  • Strain the potatoes and mash thoroughly.
  • In a separate pot, melt butter and cream. Add the mashed potatoes, salt, and pepper. Stir to combine.

Cook the Lamb Chops

  • Grill the lamb chops on both sides until nicely browned. Transfer to a preheated oven (180°C/350°F) for 10 minutes, or until cooked to your desired doneness.

Glaze the Lamb Chops

  • Pour the barbecue sauce into a hot pan. Reduce slightly, then stir in a bit of butter to create a glossy glaze.
  • Add the cooked lamb chops to the sauce, turning to coat them evenly in the glaze.

Prepare the Buttered Carrots

  • Steam or boil baby carrots until tender-crisp. Toss with olive oil, salt, pepper, and 1 tbsp of butter.

Plate the Dish

  • Create a bed of mashed potatoes on a plate. Arrange the buttery carrots alongside. Place the barbecue glazed lamb chops on top and serve immediately.
