Ingredients
Jackfruit Seeds
- 1 cup Jackfruit Seeds
Spices
- 1 tsp Turmeric Powder
- 1 tsp Cumin Seeds
- 1 tsp Coriander Powder
- 1 tsp Chili Powder red
- 1 tsp Garam Masala
Other Ingredients
- 2 Tbsp Tomato Purée
- ½ cup Coconut Milk
- 2 Tbsp Oil
- 1 ½ tsp Salt or to taste
Instructions
- Boil the jackfruit seeds until tender. This will take about 20-25 minutes. Once cooked, drain the seeds and peel off the outer skin. Set aside.
- Heat the oil in a pan over medium heat. Add the turmeric powder, cumin seeds, coriander powder, and red chili powder. Sauté for about 30 seconds until fragrant, stirring constantly to prevent burning.
- Add the tomato purée and the prepared jackfruit seeds to the pan. Stir well to coat the seeds with the spice mixture. Sauté for 2-3 minutes.
- Sprinkle a little water into the pan, about ¼ cup, to create steam and help the spices meld with the jackfruit seeds. Cover the pan and let it simmer for 5 minutes.
- Remove the lid and add the garam masala and salt. Stir well to combine. Reduce the heat to low and pour in the coconut milk. Stir gently to incorporate.
- Simmer the curry for another 5 minutes, allowing the flavors to deepen and the sauce to thicken slightly. Taste and adjust salt as needed.
