Prepare the Chocolate Chia Seed Mousse

  • Grind chia seeds finely using a spice or coffee grinder.
  • Combine coconut milk, ground chia seeds, sweetener, melted dark chocolate, cocoa powder, and vanilla extract in a blender.
  • Blend until completely smooth.
  • Pour the mixture into a bowl, cover, and refrigerate for at least 4 hours, or preferably overnight.

Make the Almond Flour Tart Shells

  • Preheat oven to 350°F (180°C).
  • In a medium bowl, combine almond flour, vegan butter (or coconut oil), coconut sugar, vanilla extract, and salt.
  • Rub the ingredients together using your fingertips until a crumbly dough forms.
  • Press the dough evenly into 5 tartlet pans (3 1/2 inch diameter).
  • Bake for 20-25 minutes, or until golden brown.
  • Remove from oven and let cool completely on a wire rack. Chill for 30 minutes before removing from pans.

Assemble and Garnish

  • Once the tart shells are completely cool, fill each with the chocolate chia mousse.
  • Garnish with cacao nibs, toasted almond slivers (optional), and edible rose petals (optional).
  • Serve immediately or chill for another hour for a firmer mousse.
