For the Jackfruit Preparation

  • 1 medium Young Jackfruit about 2 lbs; choose a young, drained and rinsed., green, green jackfruit for best results. alternatively, use 1 (20 ounce) can of young green jackfruit
  • 1 cup Jackfruit Seeds boiled until tender, then blended into a paste

Prepare the Jackfruit

  • Clean and prepare the jackfruit. Remove the seeds and boil them separately until soft. Blend the boiled seeds into a smooth paste.
  • Shred the jackfruit flesh.

Make the Soup

  • Heat peanut butter in a heavy-bottomed pot over medium heat until melted and fragrant. Stir in the tomato puree and cook until softened.
  • Add the sweet corn, jackfruit seed paste, shredded jackfruit, and vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the jackfruit is tender.
  • Stir in the dried basil, chili flakes, lemon juice, salt, and pepper. Simmer for another 5 minutes.
  • Stir in the soy milk just before serving. Adjust seasonings to taste.
  • Serve hot and enjoy!
