Ingredients
For the Jackfruit Preparation
- 1 medium Young Jackfruit about 2 lbs; choose a young, drained and rinsed., green, green jackfruit for best results. alternatively, use 1 (20 ounce) can of young green jackfruit
- 1 cup Jackfruit Seeds boiled until tender, then blended into a paste
For the Soup
- 1 cup Tomato Puree
- 1 cup Corn Kernels fresh or frozen, sweet
- 1 cup Jackfruit boiled, then shredded
- 2 tbsp Peanut Butter depending on preference, smooth or crunchy
- 1 cup Soy Milk unsweetened
- 1 tsp Basil dried
- 1/2 tsp Chili Flakes or to taste
- 2 tbsp Lemon Juice freshly squeezed
- 1/2 tsp Pepper black, freshly ground
- 1-2 tsp Salt or to taste
- 4 cup Vegetable Broth or water
Instructions
Prepare the Jackfruit
- Clean and prepare the jackfruit. Remove the seeds and boil them separately until soft. Blend the boiled seeds into a smooth paste.
- Shred the jackfruit flesh.
Make the Soup
- Heat peanut butter in a heavy-bottomed pot over medium heat until melted and fragrant. Stir in the tomato puree and cook until softened.
- Add the sweet corn, jackfruit seed paste, shredded jackfruit, and vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the jackfruit is tender.
- Stir in the dried basil, chili flakes, lemon juice, salt, and pepper. Simmer for another 5 minutes.
- Stir in the soy milk just before serving. Adjust seasonings to taste.
