Ingredients
Koftas
- 1/2 cup Jackfruit boiled
- 1 cup Potato mashed
- 1/2 tsp Salt
- 1 tsp Coriander ground
- 1 tsp Chili Powder
- 1 tbsp Greek Yogurt
Curry Sauce
- 2 tbsp Oil
- 2 leaves Bay Leaves
- 1 tsp Garlic Paste
- 1 tsp Ginger Paste
- 1 tbsp Onion Paste
- 2 tbsp Tomatoes chopped
- 1 tsp Cumin Seeds
- 1 tsp Salt or to taste
- 1 tsp Garam Masala
Instructions
- Boil the jackfruit and potato separately until tender. Drain well.
- In a bowl, mash the boiled jackfruit and potato together with ½ teaspoon of salt. This forms the base of the koftas.
- Add the ground coriander, chili powder, and Greek yogurt to the jackfruit-potato mixture. Mix well to combine all the ingredients.
- Shape the mixture into small, round balls or oval-shaped koftas. Set aside.
- Heat the oil in a large pan over medium heat. Gently fry the koftas until golden brown on all sides. This adds a delicious texture and depth of flavor. Remove the koftas from the pan and set aside.
- In the same pan, add the bay leaves and sauté for a few seconds until fragrant. Add the garlic paste and ginger paste, stirring continuously until fragrant, about 30 seconds. This step builds the flavor base of the curry sauce.
- Add the onion paste and chopped tomatoes to the pan. Sauté for a few minutes until the tomatoes soften and the mixture thickens slightly.
- Return the fried jackfruit koftas to the pan. Add 1 teaspoon of salt, or to taste, and the garam masala. Stir gently to coat the koftas in the sauce.
- Reduce the heat to low, cover the pan, and simmer for 5-7 minutes, allowing the koftas to absorb the flavors of the sauce. This creates a harmonious blend of spices and textures.
- Serve hot with rice or roti.
