Ingredients
Cracked Wheat & Spices
- 1 cup Cracked Wheat daliya, dry roasted for 5 minutes
- 1 tsp Cumin Seeds jeera
- 1 tsp Ginger finely chopped
- 1.5 tsp Salt or to taste
- 1/2 tsp Chili Powder or to taste, red
Vegetables
Other Ingredients
- 1 tbsp Oil vegetable or canola oil
- 1 tbsp Coriander finely chopped, for garnish
- 1 tbsp Lemon Juice
- 2 cup Water
Instructions
Preparing the Daliya
- Dry roast the cracked wheat (daliya) in a pan for 5 minutes until fragrant. Set aside.
Sautéing the Vegetables
- Heat oil in a pressure cooker. Add cumin seeds and sauté for 30 seconds until fragrant. Add ginger and onions; sauté until translucent.
Combining Ingredients
- Add tomatoes and green chilies. Sauté for a minute. Add green peas, carrots, beans, and cauliflower. Stir in salt and red chili powder. Sauté for 2-3 minutes until vegetables are slightly softened.
Cooking the Daliya
- Add the roasted cracked wheat to the vegetables. Stir well to combine. Add 2 cups of water and 1 tablespoon of lemon juice.
Pressure Cooking
- Close the lid of the pressure cooker and cook for 1 whistle. Allow the pressure to release naturally for 5-10 minutes.
Finishing Touches
- Carefully open the pressure cooker. Stir in the chopped coriander leaves. Serve hot with yogurt or raita of your choice.
