Cracked Wheat & Spices

Vegetables

  • 1 Onion finely sliced
  • 1/2 cup Peas fresh or frozen, green
  • 1 medium Carrot finely chopped
  • 1/2 cup Beans green, trimmed and chopped
  • 1/2 cup Cauliflower finely chopped florets
  • 1 medium Tomato finely chopped
  • 2 Chilies finely chopped (adjust to taste), green

Instructions
 

Preparing the Daliya

  • Dry roast the cracked wheat (daliya) in a pan for 5 minutes until fragrant. Set aside.

Sautéing the Vegetables

  • Heat oil in a pressure cooker. Add cumin seeds and sauté for 30 seconds until fragrant. Add ginger and onions; sauté until translucent.

Combining Ingredients

  • Add tomatoes and green chilies. Sauté for a minute. Add green peas, carrots, beans, and cauliflower. Stir in salt and red chili powder. Sauté for 2-3 minutes until vegetables are slightly softened.

Cooking the Daliya

  • Add the roasted cracked wheat to the vegetables. Stir well to combine. Add 2 cups of water and 1 tablespoon of lemon juice.

Pressure Cooking

  • Close the lid of the pressure cooker and cook for 1 whistle. Allow the pressure to release naturally for 5-10 minutes.

Finishing Touches

  • Carefully open the pressure cooker. Stir in the chopped coriander leaves. Serve hot with yogurt or raita of your choice.
