  • Dry roast the cracked wheat in a pan over medium heat until fragrant. This enhances the nutty flavor. Transfer to a bowl.
  • In the same pan, dry roast the oats over low heat for 1 minute. Be careful not to burn them. Transfer to the bowl with the cracked wheat.
  • Coarsely grind the roasted oats and cracked wheat together in a mixer or food processor.
  • Heat a teaspoon of oil in a pan. Add mustard seeds and urad dal. Sauté until the mustard seeds splutter and the dal turns golden brown.

  • Add the chopped green chili and grated carrot to the pan. Sauté for a minute until slightly softened.
  • Transfer the sautéed ingredients to the bowl with the ground oats and cracked wheat mixture.
  • Add fresh curd and salt to the bowl. Mix well, adding water gradually, until the batter reaches the consistency of regular idli batter.
  • Just before steaming, add the eno fruit salt (or baking soda). Mix gently. The eno fruit salt acts as a leavening agent, creating light and airy idlis.
  • Immediately grease idli molds and pour the batter into them.
  • Steam the idlis for about 15-20 minutes, or until a toothpick inserted comes out clean.
  • Alternatively, if you have time, let the batter rest for 30-45 minutes before steaming. This allows for natural fermentation and eliminates the need for eno fruit salt or baking soda.
  • For added nutrients, consider adding grated cabbage or fresh green peas along with the carrot.

  • For extra crunch and nutrition, add a handful of finely chopped nuts like cashews or almonds to the batter before steaming.
  • If you prefer a milder flavor, sauté some finely chopped onions, green chilies, and curry leaves and mix them into the batter for an aromatic touch.
  • To prevent the idlis from sticking, lightly grease the idli molds with a drop of ghee or coconut oil; this will also lend a subtle richness to the final dish.
  • Leftover idlis can be diced and tossed with a tempering of mustard seeds, curry leaves, and chopped tomatoes to create a quick, flavorful idli upma for the next meal.

  • For perfectly fermented batter, use a warm place for fermentation and allow sufficient time, especially in colder climates. A slightly sour aroma indicates proper fermentation.
  • Achieve soft and fluffy idlis by grinding the batter to a smooth consistency and not over-steaming them. Check for doneness by inserting a toothpick – it should come out clean.
