Ingredients
Lapsi Upma
Spices & Aromatics
- 1/2 tsp Mustard Seeds rai
- 5-7 leaves Curry Leaves fresh
- 1 Onion finely chopped
- 1 Chili deseeded, finely chopped; adjust to taste, green
- 1/2 tsp Chili Powder red
- 1/4 tsp Turmeric Powder haldi
- 1 1/2 tsp Salt to taste
Garnish
- 1 tbsp Peanuts roasted, optional; crushed
- 1/4 cup Coriander fresh cilantro, chopped; dhania
- 1 tbsp Lemon Juice
Instructions
Dry Roasting the Lapsi
- Dry roast the lapsi in a pan over medium heat for 2-3 minutes, until lightly fragrant. Set aside.
Sautéing Aromatics
- Heat oil in a pressure cooker or pot over low heat. Add mustard seeds and curry leaves. Once the mustard seeds begin to splutter, add the chopped onion and green chili. Sauté until the onions become translucent.
Cooking the Upma
- Add the roasted lapsi, red chili powder, turmeric powder, and salt to the cooker. Stir well to combine. Pour in the water, close the lid, and cook on low heat for 1 whistle. Allow the pressure to release naturally. Do not forcibly open the cooker.
Garnish and Serve
- Once the pressure is released, fluff the Lapsi Upma with a fork. Garnish with roasted peanuts, fresh coriander, and a squeeze of lemon juice. Serve hot.
