Ingredients
 

For the Idli Batter

  • 1 cup Cracked Wheat dalia, thinly cracked
  • 1/4 cup Split Chickpea split chickpeas; soak for 2-3 hours
  • 1 bunch Spinach about 1 cup packed, finely chopped
  • 2 tbsp Yogurt curd, plain
  • 1.5 tsp Salt or to taste
  • 1 tbsp Oil for tempering and greasing

Prepare the Ingredients

  • Wash and finely chop the spinach. Soak the chana dal for 2-3 hours. Roast the cracked wheat lightly in a dry pan until fragrant, then soak it for 30 minutes.

Make the Batter

  • In a blender, combine the soaked chana dal, soaked cracked wheat, and chopped spinach. Blend into a coarse batter. Add yogurt and salt; mix well.

Temper the Batter

  • Heat oil in a small pan. Add mustard seeds and let them splutter. Add curry leaves and green chilies; sauté for a minute. Pour this tempering into the idli batter and mix well.

Steam the Idli

  • Grease idli molds with oil. Fill the molds with the batter. Steam in an idli steamer for 10-12 minutes, or until the idlis are cooked through.

(Optional) Prepare Fried Spinach Topping

  • Heat oil in a pan. Add cumin seeds and a pinch of salt. Add chopped spinach and sauté until it becomes crunchy. Set aside.

Serve

  • Let the idlis rest for 5 minutes before removing them from the molds. Serve hot with your favorite chutney. Top with the fried spinach (optional).
