Prepare the Daliya

  • Dry roast 1 cup of daliya in a pan or pressure cooker until lightly browned. Set aside.

Sauté Aromatics and Vegetables

  • Heat 2 tbsp of oil in the same pan or pressure cooker. Add 1/2 tsp cumin seeds, 1/4 tsp black peppercorns, 1-inch cinnamon stick, and 2 cloves. Sauté until fragrant.
  • Add 1 cup of chopped mixed vegetables (carrots, potatoes, peas, cauliflower, and beans are suggested) and sauté for 2 minutes until slightly softened.

Combine and Cook

  • Add the roasted daliya, 1/2 tsp turmeric powder, 1/2 tsp red chili powder, and 1.5 tsp salt (or to taste). Mix well to coat the vegetables and daliya with the spices.
  • Add 1 cup of water, close the lid of the pressure cooker, and cook for 3-4 whistles. Allow the pressure to release naturally.

Serve

  • Once the pressure is released, fluff the daliya with a fork and serve hot. Enjoy!
