Ingredients
For the Tikki Mixture
- 2 cup Rolled Oats instant oats
- 2 Potato boiled and coarsely mashed, large
- 1/2 cup Peas boiled
- 1/2 cup Carrot grated
- 1 Zucchini grated
- 1/2 cup Corn Kernels
- 50 gm Cottage Cheese paneer, grated; can substitute with tofu or vegan cream cheese
- 2 tsp Coriander finely chopped, fresh
- 1 Chili finely chopped, green
- 1 tsp Mint Leaves finely chopped, fresh
- 1 tsp Ginger grated
- 1 tsp Lemon Juice
- 1.5 tsp Salt or to taste
- 1/2 tsp Chili Powder optional, red
- 1 tsp Dry Mango Powder dry mango powder, optional
- 1/2 tsp Garam Masala optional
For Pan-Frying
- 2 tbsp Corn Flour
- 4 tbsp Water
- 1/2 cup Breadcrumb optional
- 5 tbsp Vegetable Oil canola oil preferred
Instructions
Prepare the Tikki Mixture
- Combine rolled oats, mashed potatoes, peas, grated carrot, zucchini, corn kernels, cottage cheese, coriander, green chili, mint leaves, ginger, lemon juice, salt, red chili powder (optional), amchur powder (optional), and garam masala (optional) in a large bowl. Mix well until all ingredients are thoroughly combined.
Shape the Tikkis
- Gently form the mixture into small, flat patties (tikkis). The size will depend on your preference.
Prepare the Coating (Optional)
- In a small bowl, whisk together cornstarch and water to create a slurry. Dip each tikki into the slurry, then coat with bread crumbs (optional).
Pan-Fry the Tikkis
- Heat vegetable oil in a large non-stick skillet over medium heat. Carefully place the tikkis in the skillet, ensuring not to overcrowd. Pan-fry for 2-3 minutes per side, or until golden brown and crispy.
