Ingredients

- 1 cup Gram Flour besan
- 2 Garlic cloves, minced
- 1/2 tsp Pepper black, ground
- 1.5 tsp Salt or to taste
- 1/2 cup Water add more as needed for desired consistency, approximately
- 1/4 tsp Baking Soda
For the Yogurt Topping
For Cooking & Garnishing
- 1.5 tsp Oil for pan-frying
- 1 tbsp Coriander finely chopped, for garnish
- Optional Chickpea Noodle for garnish
- Optional Pomegranate Seeds for garnish
Instructions
Prepare the Phulki Batter
- In a large bowl, whisk together chickpea flour, minced garlic, black pepper, salt, and baking soda. Gradually add water, whisking continuously until a smooth, pancake-like batter forms. The batter should be pourable but not runny.
Prepare the Yogurt Topping
- In a separate bowl, whisk together yogurt, black salt, minced garlic, and chopped green chili until smooth. Taste and adjust seasoning as needed.
Cook the Phulki
- Heat a few drops of oil in each section of an appe pan (or a non-stick pan) over medium heat. Pour 1/2 teaspoon of batter into each section, ensuring not to overcrowd the pan. Close the lid and cook for 2-3 minutes, or until light golden brown. Flip and cook for another 2-3 minutes.
Assemble and Serve
- Remove the cooked phulki and place them in a serving bowl. Top with a layer of the yogurt mixture. Repeat the process until all the phulki and yogurt are used.
